Last summer, when my boss sent out a note that said, "I'm buying lunch! Pick what you want at the taco truck outside" I honestly thought it would just be another meal from another truck.  What I didn't realize was that my taste buds would soon start rejoicing and I would soon have a new favorite in Rochester, Minnesota.  Now, that truck is expanding and opening a restaurant in the Med City...and my taste buds are basically going wild.

Super Tasty Taco Lab is Opening Restaurant in Rochester, Minnesota

Just a few days ago, it was sadly announced that one of Rochester's most authentic Mexican restaurants was closing.  Taqueria El Sueno opened at 1203 7th Street Northwest back in 2016 but just announced that their last day of serving food will be Wednesday, February 28th, 2023.

This restaurant won't stay dark for too long though.  Taco Lab, which currently has a food truck parked at 1310 5th Place NW in Rochester, is going to open its own restaurant in the old Taqueria El Sueno location.

When is Taco Lab Opening The New Location in Rochester?

If your taste buds are tingling, you'll need to calm them down for a bit.  The new place won't be ready immediately, but according to KTTC, the plan is to open towards the beginning of April.  Once I hear more, I'll post an update on my Facebook page - Jessica On The Radio.
